Easy Meal Prep Breakfast Burritos

I am almost never awake on time to make breakfast, so these breakfast meal prep burritos are pretty much the only way I ever eat breakfast. You can add or remove ingredients and swap out anything you dislike for anything you do like, making this a very versatile breakfast recipe!



Burrito



Breakfast Meal Prep Burrito Ingredients (Makes 6 burritos)

  • 6 large flour tortillas (whole wheat or regular)

  • 8 large eggs

  • 1/4 cup milk

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)

  • 1 cup cooked breakfast sausage, bacon, or diced ham (optional)

  • 1 cup cooked and diced vegetables (bell peppers, onions, spinach, mushrooms, etc.)

  • Optional toppings (add after reheating): salsa, hot sauce, or avocado


Instructions

  1. Cook the Fillings

    • Cook the breakfast sausage or bacon in a skillet if using. Remove and set aside.

    • Sauté vegetables in the same skillet until softened.

  2. Make the Eggs

    • In a bowl, whisk eggs, milk, salt, and pepper.

    • Scramble the eggs in a non-stick pan over medium heat until just set.

    • Combine eggs, cooked meat, and veggies.

  3. Assemble the Burritos

    • Lay a tortilla flat and add about 1/6 of the egg mixture to the center.

    • Sprinkle with shredded cheese.

    • Fold the sides of the tortilla inward and roll tightly to form a burrito.

  4. Wrap for Storage

    • Wrap each burrito in aluminum foil or parchment paper.

    • Store in a zip-top freezer bag and freeze for up to 3 months.

  5. Reheat and Serve

    • To reheat from frozen:

      • Microwave: Remove foil, wrap in a damp paper towel, and heat for 2–3 minutes, flipping halfway.

      • Oven: Keep in foil and bake at 350°F (175°C) for 25–30 minutes.

    • Add toppings after reheating, if desired.
