Easy Meal Prep Breakfast Burritos

I am almost never awake on time to make breakfast, so these breakfast meal prep burritos are pretty much the only way I ever eat breakfast. You can add or remove ingredients and swap out anything you dislike for anything you do like, making this a very versatile breakfast recipe!

Breakfast Meal Prep Burrito Ingredients (Makes 6 burritos)
6 large flour tortillas (whole wheat or regular)
8 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
1 cup cooked breakfast sausage, bacon, or diced ham (optional)
1 cup cooked and diced vegetables (bell peppers, onions, spinach, mushrooms, etc.)
Optional toppings (add after reheating): salsa, hot sauce, or avocado
Instructions
Cook the Fillings
Cook the breakfast sausage or bacon in a skillet if using. Remove and set aside.
Sauté vegetables in the same skillet until softened.
Make the Eggs
In a bowl, whisk eggs, milk, salt, and pepper.
Scramble the eggs in a non-stick pan over medium heat until just set.
Combine eggs, cooked meat, and veggies.
Assemble the Burritos
Lay a tortilla flat and add about 1/6 of the egg mixture to the center.
Sprinkle with shredded cheese.
Fold the sides of the tortilla inward and roll tightly to form a burrito.
Wrap for Storage
Wrap each burrito in aluminum foil or parchment paper.
Store in a zip-top freezer bag and freeze for up to 3 months.
Reheat and Serve
To reheat from frozen:
Microwave: Remove foil, wrap in a damp paper towel, and heat for 2–3 minutes, flipping halfway.
Oven: Keep in foil and bake at 350°F (175°C) for 25–30 minutes.
Add toppings after reheating, if desired.
